  8. Make ready 1 Puff Pastry sheet

  10. Get 1 TBS olive oil

Use ham, bacon, or whatever protein. This quiche needs flavor boosters, so use your spice cabinet. Sautee onion, garlic & spinach in butter until onion is soft - add salt & pepper to taste - set aside. In medium mixing bowl - whisk together the eggs & milk.

Instructions to make Spinach Quiche:
  1. You can substitute bacon with any kind of meat. or Meat is not must. The recipe will work well with vegetables!
  2. Slice onion. Cut bacon in small pieces.
  3. Boil spinach in boiling and saluted water until it becomes soft. Drain and let you spinach cool. After that, squeeze it to reduce water and cut as you like.
  4. In a frying pan, heat olive oil and fry bacon, sliced onion and shimeji (mushrooms) until become soft.
  5. In a ball, whisk egg, milk, salt and pepper and cheese well. Add your spinach and other ingredients and mix well.
  6. Set pastry sheet in a baking tin and sprinkle the mixture.
  7. Bake at 200℃ for 25-30 mins

Spread shredded cheese in bottom of pie crust. Spread spinach mixture over cheese in pie crust. Pour egg/milk custard over spinach mixture & cheese. This spinach quiche is Trish's "go-to" brunch dish. The combination of heavy cream and Gruyère makes it rich and flavorful.
