- Get Some stale bread for breadcrumbs

Place salmon at one end of a roasting tray or baking pan. Drizzle a little olive oil over the top. Toss the green bean mixture on the other end of the tray. Toss the courgettes in the remaining oil and add them and the salmon to the tin.
Instructions to make Veg and salmon tray bake:
- Preheat oven to 180. Wash and chop veg, dry well and put in a bowl. Drizzle with olive oil and sprinkle with salt. Whizz up bread and garlic in a food processor. Add veg to an oven proof dish lined with baking paper
- Sprinkle breadcrumbs on top of veg, save a bit for later. Roast veg for about 20 - 25 minutes. Meanwhile, wash and dry salmon, sprinkle with a little salt
- After 20-25 minutes, remove from oven and add salmon on top. Sprinkle with remaining breadcrumbs and pop back in the oven for about 10 minutes, depending on thickness of salmon. Serve and enjoy 😀
To begin, Simply place all your veggies on a sheet pan. Lightly season the veggies with salt, pepper, and olive oil. The vegetables are done when you can pierce them easily with a fork. However, I recommend using the salmon as the main sign of doneness for salmon foil packets with vegetables. If you prefer different vegetables for your salmon foil packets in the oven (or salmon foil packets on the grill), go for it!
