To get started with this recipe, we have to first prepare a few ingredients. You can have french caramelised onion soup using 10 ingredients and 3 steps. Here is how you can achieve that.

The ingredients needed to make French Caramelised Onion Soup:
  1. Prepare 50 grams butter
  2. Get 4 white onions thinly sliced
  3. Take 1 tsp garlic paste
  4. Get 100 ml non alcoholic white wine (or alcoholic white wine)
  5. Make ready 1 litre good quality beef stock
  6. Take Small french baguette
  7. Take 1 garlic clove to rub on croutons
  8. Prepare 100 grams grated gruyere cheese
  9. Take Salt and pepper
  10. Take Chopped parsley

The ingredients for this soup are great, but I did cook my onions until they were a sweet and dark brown (not burnt) before adding the stock and other ingredients. Try it, you will be amazed at the richness it adds. I also like to toast the French bread a bit before it. French Onion Soup is essentially caramelised onion in soup form topped with cheesy bread.

Instructions to make French Caramelised Onion Soup:
  1. Melt the butter in a wide saucepan (this gives to onions space to caramelise beautifully) and gently fry the onions and garlic paste over a very low heat for as long as time allows….to get the best flavour out of this dish, never rush it and just be patient.
  2. Add your white wine to loosen your caramelised onions, bring to the boil and add your beef stock. Simmer gently. Make your croutons by slicing the baguette into thick portions, toast the bread both sides and rub with a clove of slightly crushed garlic. Under the hot grill melt your cheese, I like mine just on the point of melting, but it’s down to your preference.
  3. Taste your soup for seasoning, add salt & pepper to your liking. Ladle the soup into bowls, place your croutons on top and scatter with fresh chopped parsley.

Caramelising onions calls for patience, but it's worth it. You'll be rewarded with deeply golden, intensely sweet onions that forms an incredible flavour base for this French Onion Soup. This French onion soup isn't like all the other French onion soups out there. First, I like to add sliced fennel with the onions while they caramelize. The sharp, slightly bitter fennel adds some contrast to the sweetness of the onions.
