The ingredients needed to make Masala vegan pasta:
  1. Take 1/2 of 1 lb Pasta -   box
  2. Prepare 2 Onion - medium size

  10. Prepare 1/8 tsp Turmeric powder - th
  11. Get 1/2 tsp Garam masala -
  12. Make ready 1 tbsp Tomato ketchup -
  13. Prepare Salt - as needed
  14. Take 2 tbsps+2 tbsps Olive Oil -
  15. Make ready 3 cups Water -
  16. Take Veggies :
  17. Take carrot beans peas potato green bell pepper , , , , - all finely cut , cooked
  18. Make ready Parmesan cheese - as needed

Here's a new fusion recipe of pasta made with Indian spices and tomato sauce…. It's a rich, creamy vegan pasta that will leave you longing for more. What's more exciting is that it can be prepared over a stovetop or the Instant Pot. It took a few trials and errors to get the right combination of texture, heat, and taste.

Instructions to make Masala vegan pasta:
  1. Boil water in a pot, add salt to taste and 2 tbsp of olive oil, pasta (any variety) I used pipe. Cook until done about 15 minutes. Drain pasta, keep aside. You can reserve  some pasta cooked water incase if your pasta turns out dry you can add that instead of water.
  2. Heat oil in a wok or pan, add oil then crushed garlic, sauté until nice aroma comes, then add finely chopped onions, sauté them well. Add ginger garlic paste, sauté well until raw smell goes, then add all the masala's, sauté well. Add diced tomatoes, salt as needed (remember that we have already added salt in pasta) mix well until nicely combined, cover the pan with lid, lower the flame and cook for 5 mins stirring occasionally.
  3. When the tomatoes turn mushy, add finely cut green bell pepper, sauté well. Then add cooked veggies, mix well cover and cook for 5 mins in low  flame.
  4. Finally add cooked pasta,mix well. Add grated Parmesan cheese, chopped coriander leaves, tomato ketchup. Mix well. Taste for salt if you want you can add more, also if your pasta seems to be dry, add the reserved pasta water and mix well.
  5. Serve hot.

Turn the heat down to medium-high and add in the cumin turmeric and coriander powder. Stir and cook for about two more minutes. Wash out the food processor jar with some of the water from the ingredients list to get the maximum amount of flavor out of any remaining onion-garlic-ginger puree, and reduce clean-up (win-win!). I use the tikka masala sauce in three ways to give this recipe triple the flavor! Coat and roast the veggies, mix with chickpeas and bake until crispy, then drizzled on top for a final flavor punch.
