- Get Vegetable broth

- remove top of bell peppers, seeds, membranes, wash, and boil bell peppers whole for 5 min before cooking and set aside

- Time for zucchini. Add 1 tbsp oil and minced garlic to hot pan
- Thinly slice zucchini horizontally. I have a slicer so it's easy for me
- Add zucchini to hot pan and stir. Add seasoning. Again, go according to your taste. Sauté until nice and soft, but still with some crunch. Once done, set aside
- Time for tomatoes sauce
- In hot pan/pot, add oil and minced garlic
- Add the cans of tomatoes listed. Let simmer.
- Add seasoning to tomato sauce and add vegetable broth. Add to texture and taste and stir
- At this time, return ground turkey to heat. Once heated, add 2 tbsp of tomato sauce in meat and stir.
- Time to layer… YESSSSS…
- As follows: take a baking or roasting pan…. add about 3 tbsp of sauce in pan..
- Add about 6 slices of zucchini
- Add whole bell peppers
- Add meat
- Add zucchini
- Add roasted tomatoes only for now.
- Add sauce… I added the remaining meat to the sauce and added on top
- Add cheese… Mozzarella and feta mixed
- Baked covered for 40 min and broil bet 5 and 10 min. Voila
