- Prepare 1 tbls sesame oil

- Take 1/2 tsp Sriracha, optional

- Prepare 36 (2 inch) Wonton wrappers

- Heat 1 tbls sesame oil in a large stock pot or Dutch oven over medium heat. Add garlic and ginger, and cook stirring frequently, until fragrant, about 1-2 minutes.
- Whisk in chicken broth, mushrooms and 2 cups water.
- Bring to a boil, reduce heat and simmer till mushrooms have softened, about 10 minutes. Stir in greens and/or bok choy, and green onions. Stir in miso paste until well combined, about 1-2 minutes.
- Stir I wontons until cooked through, appx 2-3 minutes

In a medium-sized bowl, combine the chopped shrimp, water chestnuts, garlic, soy sauce, sesame oil, sugar, chopped green onion, and a pinch of white pepper. Lay out several wonton skins and place a teaspoon or so of the shrimp mixture in the center. Dip the tip of your finger in a bit of water and dampen the edge of half the wonton.
